    The Office of the Vice President for Research would like to recognize the University of Connecticut Rudd Center for Food Policy & Obesity Director Dr. Marlene B. Schwartz, PhD, for her important study “New School Meal Regulations Increase Fruit Consumption and Do Not Increase Total Plate Waste,” which has been cited in several publications including First Lady Michelle Obama’s “Let’s Move” blog and USA Today (full article). In this study, Dr. Schwartz concluded that not only did new meal standards instituted during the 2012-2013 school year as a result of the Healthy, Hunger-Free Kids Act reduce plate waste in school cafeterias, they also positively impacted fruit and entrée consumption amongst students.
