    Seminar Title: “The Impact of a Short-Term Educational Intervention on Diet Choice Among College Students”

    Abstract: 

    Discussions on sustainability are increasingly concentrating on the environmental impact of Western diets, and the potential implications of the adoption of these diets in developing countries. While the impact of nutritional educational interventions on consumer food choice has been well studied, researchers are only now beginning to look at the effect of providing information on environmental outcomes. A UCLA study found that students who took a semester-long freshman seminar on the global sustainability of the food system adopted more environmentally friendly diets than a corresponding control group. We investigate whether the incorporation of discipline-specific educational modules into college courses can have similar effects. We find no significant impacts from the intervention, demonstrating the importance of persistently providing information to attain behavioral change.
