The Science of Food meets CA 3 GenEd requirements and is an introductory course for students interested in the application of science to food. Nutritional and functional attributes of various food constituents are discussed. Food processing and food safety also are covered.

Also consider ANSC 3343 and ANSC 3344W if you need a W-class. These courses will be offered during Summer Session 2 and focus on food products derived from animal agriculture, including dairy, meat, poultry, and fish.
